Lettuce Tacos Recipe

Getting kids to eat salad can sometimes feel like a challenge, but one simple and delicious way to introduce them to leafy greens is by using them as a wrap for other flavours, as in this lettuce tacos recipe!

Lettuce is a light crisp green that is packed with vitamin A, K and folic acid that support kids growing bodies. Plus, it contains a special plant nutrient called lactucarium, which helps them relax.

Surprisingly, in my school taste tests 95% of kids loved the crunchy mild flavour of iceberg lettuce. Though the peppery taste of rocket had them reaching for their water bottles!

Let’s explore how you can make lettuce a fun part of family meals with a delicious lettuce tacos recipe!

Making Lettuce Fun for Kids

  • Let them build their own tacos!  Kids love getting involved in the kitchen. Create a toppings station and let them choose what goes inside. Examples; chicken with peanut dipping sauce, chunks of cheese and pineapple, black beans, tomato and avocado, mozzarella, tomato and pesto, or tuna and sweetcorn.

  • Turn it into a taste test! Try different types of lettuce (romaine, iceberg, butter lettuce) and let kids decide which is their favorite.

  • Give it a fun name! Call them “Crunchy Green Tacos” or “Superhero Lettuce Wraps” to make them sound exciting.
